Tomatoes are a rich source of Vitamin A, Vitamin C and Folic Acid. This is a very delicious tomato soup recipe by Sanjeev kapoor. I tried it with some changes and it turned out awesome.

Here is the Tomato Eggdrop Soup recipe:
Serves: 3-4
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Ingredients:
Tomatoes: 4 medium finely chopped
Eggs: 2
Onion: 1 medium finely chopped
Ginger: 1 inch piece finely chopped
Garlic: 7-8 cloves finely chopped
Tomato Ketchup: 4 tbsp
Pepper Powder: 1/2 tsp
Corn flour: 2 tbsp
Vinegar: 2 tbsp
Sugar: 1 tbsp
Coriander Leaves: 1 tbsp finely chopped
Salt: to taste
Method of Preparation:
- Heat oil in a pan and stir fry the onion till translucent. Add ginger and garlic and stir fry briefly.
- Add tomatoes and mix well. Cover and let cook for 1-2 minutes.
- Add salt, pepper powder, tomato ketchup and mix well. Add 3 cups of water and stir. Close lid and let it cook.
- Break eggs in a bowl and beat well.
- Mix corn flour in 1/2 cup water and add it to the soup and cook till it thickens. Add vinegar and sugar and mix well.
- Drop egg into the soup in a thin stream and mix gently till egg coagulates and rises to the top. Add coriander and mix well.
