Here is an authentic Goan Varan recipe. Varan is a preparation of dal without onion and garlic. It is usually eaten with rice (Bhaat) and tastes best with a dash of ghee.
Varan Bhaat is quite famous throught out Maharashtra and Goa. In Goa, Varan is generally prepared during Festive occasions like Ganesh Chaturthi where onion and garlic is a strict NO 🙂 It is very easy to make and is ready within minutes. Also, it uses very simple ingredients easily available in the kitchen.

Ingredients:
Grated coconut: 4 tbsps
Toor Dal: 1/2 cup
Cumin seeds: 1/4 tsp
Asafoetida (Hing): Pinch
Turmeric powder: 1/2 tsp
Sugar: Pinch
Salt: 3/4 tsp
Method of Preparation:
- Soak the toor dal in 1.5 cups of water for around ½ hour and cook it in a pressure cooker (3-4 whistles)
- Grind together the coconut, cumin seeds and asafoetida.
- Mix together the toor dal and the ground mixture.
- To this, add salt, turmeric powder and sugar. Close lid and bring to boil.
Usually on days we do not eat onion and garlic, I am always left thinking on what to cook. Then these curries and sabzis come to my rescue: waran, wadiyacho ros,pumpkin sabzi, capsicum sabzi.
