Vegetable Pulao is a rice dish prepared by cooking rice with various vegetables and spices. It is a very simple recipe and gets ready in a jiffy. It tastes good by itself or also can be served with raita or gravies.
A few days back, we had some friends over for dinner. I must say that I took the most time in deciding the rice dish. I wanted to make something without a lot of spice so that the kids would enjoy it too. Also, I had two gravies for the main course, so wanted the rice dish to go with it. Finally, I decided on this recipe of Vegetable Pulao.
Since this is a very simple recipe and tasty too, I am sure I will make it quite often now
Here is the step by step recipe for Vegetable Pulao with pictures:
Serves: 4-5
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Ingredients:
Basmati Rice: 2.5 cups
Onion: 2 medium finely chopped
Green Peas: 1.5 cups
Carrots: 2 cups cut into thin strips
Cinnamon: 3 pieces
Cardamom: 8
Cloves: 12
Bay Leaves: 3
Cumin Seeds: 1 tsp
Oil: 4 tbsp
Water: 6.5 cups
Salt: 3.5 tsp
Method of Preparation:
- Wash and soak rice in water for 1/2 hour.
- In a pan, heat oil. Add cinnamon, cardamom, cloves, bay leaves and cumin seeds. Stir fry briefly.
- Add onion and stir fry till translucent.Add carrots and green peas and fry for 2 minutes.
- Add rice and salt and fry for 2 minutes.
- Add the water. Close lid and let cook on medium heat till rice is completely cooked.
