Whole Wheat Banana Muffins is a very simple and tasty muffins recipe which uses ripe bananas and whole wheat flour, thus making them really healthy. They serve as a great dessert or evening snack or also as a perfect tiffin box option. Also, this recipe is great in finishing of over ripe bananas.
I love desserts, but am often concerned about the extra calories that come along with them. I believe that some extra calories once in a while is no big harm. However, if you get to eat a dessert which is yummy too along with being healthy, who would not like it? Whole Wheat Banana Muffins give you just that perfect dessert.

Makes: 11 muffins
Preparation Time: 10 minutes
Cooking Time: 25 minutes
Ingredients:
Whole Wheat Flour: 1 and 1/2 cups
Bicarbonate of Soda: 1/2 tsp
Baking Powder: 1 tsp
Salt: A pinch
Butter: 1/2 cup melted
Ripe Bananas: 5 big
Sugar: 1/4 cup
Lemon Juice: 1 tbsp
Vanilla Essence: 1 tsp
Walnuts: 1/4 cup chopped
Method of Preparation:
- Line the muffin tray with muffin liners. Pre-heat the oven to 180 degrees Celsius.
- Sieve together the whole wheat flour, bicarbonate of soda, baking powder and salt.
- In a bowl mash the bananas. Add sugar to the bananas and mix well. You can increase or decrease the amount of sugar added based on the sweetness of the bananas used.
- Add butter, vanilla essence, walnuts and lemon juice to the banana-sugar mixture and mix well.
- Gently fold in the dry ingredients into the wet ingredients. The muffin batter is ready.
- Put the muffin batter in the muffin liners till 3/4 full.
- Place in oven and let cook for 20-25 minutes. Time required for baking the muffins might vary based on oven used. Insert toothpick in the center of the muffin to check if it comes out clean. If yes, the muffins are ready.
